Rather than tasting of stone fruit, the kernel lends a marzipan, bitter almond flavor. Distilled marigold kombucha brings another side of floral and tannic notes reminiscent of plum skins; the combination is sort of the suggestion of plum. This liqueur is not only rich and complex but also versatile, perfect for sipping neat or mixing into cocktails.


The sweetness from plums combines beautifully with the botanicals, resulting in a flavor profile that invites you to savor each sip. I enjoy using it in a refreshing spritz, mixing it with soda water and a twist of lemon—a delightful summer drink that captures the essence of the season.

The aromatic allure of leaves inspired Empirical to create Symphony 6. Starting with mandarin and lemon leaves for bright acidity and fruity notes, they introduced coffee leaves for darker tones and depth. Fig leaves added green, earthy flavors, evoking shade after a sunny day.


Drawing from perfumery, black currant buds added green, sulfurous layers, while ambrette seeds and vetiver roots enhanced the coffee leaves' musky warmth. Symphony 6's creation involved multiple maceration and blending stages to highlight each botanical.


Lemon and mandarin leaves were macerated separately and distilled together. Coffee leaves underwent a tea-like process before being combined with citrus cuts. Black currant buds, fig leaves, ambrette seeds, and vetiver roots were distilled separately and added to the base. The final blend, macerated with coffee leaves, achieved a twilight-like color with carmine.


I often incorporate Symphony 6 into a classic gin and tonic or my original cocktail "A Symphony of Blood". The herbal notes elevate the drink, adding a layer of sophistication that impresses friends and family alike. This is a go-to option when I want to serve something special that still feels familiar.
