This memoir traces the flavors that shaped me—from my grandfather's kitchen in Cape May, NJ to healthcare dining, resort kitchens, and eventually behind the bar. It's about the recipes that live in memory, the ones that don't translate to paper, and what happens when you're trying to find home in a plate of adobo, a perfectly balanced cocktail, or the controlled chaos of a kitchen that finally makes sense.

Lolo's Kitchen-A Grandsons Journey Through Filipino Food and Memory
The current project by AFC & Co, Lolo's Kitchen, is an epic 700+ page cookbook and memoir documenting the author's journey to preserve his grandfather's (Lolo's) unwritten Filipino recipes. A professional chef, he is meticulously reverse-engineering over 100 dishes from memory to save his family's culinary heritage. More than a typical cookbook, each recipe is a full chapter detailing the memory behind the dish, the process of its recreation, and the final definitive recipe—creating a deeply personal heirloom for those who believe food is a story.
